The Merlot grapes are grown on Doolhof from one of the first vineyards established on the farm. \u003c\/p\u003e\n\u003cp\u003eAll the grapes are hand harvested and undergo bunch sorting before being crushed into stainless steel tanks for fermentation between 24-27 degrees. Malolactic fermentation occurs naturally after which the wines are aged in older French oak barrels for 12 months. Bottled May 2025.
