In 2008 they went further pursuing their\u003cbr\u003epassion for the environment, adapting Biodynamic agriculture and on top of this they\u003cbr\u003eare free from pesticides, herbicides and chemical fertilisers. The family also farm\u003cbr\u003egrains, garlic, cereals and sheep. A Biodynamic approach helps to form a closed\u003cbr\u003esustainable and biodiverse ecosystem, the grains help feed the livestock, which in\u003cbr\u003eturn fertilize the crops. The endangered black sheep species they keep are used to\u003cbr\u003emake delicious local Manchego cheese. The estate is in the hands of the younger\u003cbr\u003egeneration, Pablo Parra, who has steered the winery towards minimal intervention\u003cbr\u003ewinemaking and who is very enthusiastic about continuing the biodynamic\u003cbr\u003ephilosophy.\u003cbr\u003e\u003cbr\u003eThis Albariño comes from the warmer, drier region of La Mancha. Biodynamically\u003cbr\u003efarmed and impressively grown at high altitudes above 800m to retain the\u003cbr\u003echaracteristic acidity of the grape, the wine is then fermented using ambient yeasts\u003cbr\u003eand aged in inert stainless-steel tanks to preserve the fresh and delicate nuances of\u003cbr\u003ethe grapes. The nose gives aromas of pungent citrus, tropical fruits and hints of\u003cbr\u003ewildflowers.
