Fabien Jouves Les Escures is a natural monovarietal Malbec red wine from the AOC Cahors produced by Mas del Périé - Fabien Jouves.

Mas del Périé - Fabien Jouves is a winery located on a hill in Trespoux, Cahors. Its plots are cultivated biodynamically in order to fully respect nature, the vine and its surroundings. It was founded in 2006 by Fabien Jouves, a young winemaker who vinifies naturally, without oenological additives and accompanying the wine until its maturity, fermenting it and ageing it in concrete tanks, foudres and barrels.

The vineyards for Malbec del Fabien Jouves Les Escures have an average age of 25 years, are cultivated biodynamically and their soils are calcareous and clayey. They are located about 350 metres above sea level and are manually harvested to be able to select the grapes while still in the field.

The Fabien Jouves Les Escures harvest is destemmed and fermented in cement tanks and in barrels. The must-wine macerates with the skins for about 30 days, and once fermented undergoes an ageing of about 6 months in the same tanks in which it has fermented.
