Crafted and named in honour of of Norm’s late friend John. John Bil had an immense impact on our culture and similarly to us, he was always looking to push boundaries in his craft. He was Canada’s seafood authority, involved in the success of countless restaurants. We hope you enjoy this delicious white blend with abundant oysters and seafood, just the way John would have.

100% Prince Edward County Chardonnay from the 2021 vintage. The wine was fermented and aged in old 500L French oak barrels for 12 months, and aged a further 14 months on the fine lees in horizontal tanks, optimizing the large surface area of lees to wine.
